MEAT SAUCE RECIPE COLLECTION



Mention an Italian meat sauce recipe, pre foodie evolution, and every body would automatically think, "Spaghetti and Meatballs". Not anymore! We're braking out the secret vault of family recipes of meat sauces and we’re starting with one that originated in the town of Bologna, the home of the traditional bolognese sauce recipe. In fact there the traditional Bolognese sauce recipe registered in 1982 by the Bolognese delegation of Accademia Italiana della Cucina and consists of beef and veal stock with pancetta mixed with a variety of vegetables such as celery, onions and carrots. The broth is blended with the sautéed meat then added is a touch of milk or cream. Now we’re talkin’ meat sauce!

The history of pasta tells us that most of the meats used to create Italian meat sauces were left over scraps of meat such as beef neck bones and pigs feet. This evolved into Pancetta, Prosciutto, Mortadella and Salami's. The scraps, if you were lucky enough to have them, were tossed together with a tomato or marinara sauce recipe to create meat sauce culinary masterpieces that have been handed down from generation to generation. Like so many Italian pasta recipes that were considered peasants food then, have now become "Italian cuisine" and much like any culture it was these types of foods made with simple ingredients that made them taste so good.

Over time great chefs and amateurs that master their own private kitchens have created exciting variations of the traditional meat sauce recipe and slathered it over a bold pasta shape such as rigatoni rigate to create a simple and pleasing, hearty meal.
