Mention an Italian meat sauce recipe, pre foodie evolution, and every body would automatically think, "Spaghetti and Meatballs". Not anymore! We're braking out the secret vault of family recipes for meat sauces and one that originated in the town of Bologna, the home of the traditional Bolognese sauce recipe.

In fact there the traditional Bolognese sauce recipe registered in 1982 by the Bolognese delegation of Accademia Italiana della Cucina and consists of beef and veal stock with pancetta mixed with a variety of vegetables such as celery, onions and carrots. The broth is blended with the sautéed meat then added is a touch of milk or cream.

In addition to the traditional meat sauces we've got a selection of exotic meat sauce recipes that will feed that foodie hunger that's always looking for something creative and nouveau to tantalize the palate. Over time great chefs and amateurs that master their own private kitchens have created exciting variations of the traditional meat sauce recipe and slathered it over a bold pasta shape such as rigatoni rigate to create a simple and pleasing, hearty meal.

Italian Meat Sauce Recipe Made with Pork

But a basic meat sauce is not just about ground beef or veal. Don't forget the pork! It's not just for Sunday gravy anymore. An Italian-American sauce made famous by the ever popular "Sopranos" is the Sunday Pork Gravy. Look for the signed poster of the Soprano's on the wall of any Italian restaurant to find a good one. New Jersey is a great place to start.

There is a dish known throughout Italy as Orchetti, Salsiccia con Rapini or Translated to Orchetti with Sausage and Broccoli Rabe. The Orchetti pasta shape means little ears and the little sausage shapes tuck into the dome shapes perfectly. Rapini,the perfect amount of heat and Olive Oil make this Italian pasta recipe a real friend and family pleaser.

Italian Pasta Sauce made with Veal

An Italian Veal sauce with a tomato base is called VEAL RAGU! And any way you look at it Veal is good meat hands down. It brings a unique flavor to the sauce and ground veal is a beautiful alternative in any Italian meat sauce recipe.

In Puglia, a region in the South of Italy but in the heel of the boot rather then the all too familiar toe, you'll be delighted to find a Orchetti al Vitello. A tradition in that region.

And veal is a must when making any of your favorite Meatball recipes.

Italian Meat Sauce with Exotic Meats:

Boar is a staple meat as well as veal in Italy. You can find it in almost any butcher shop in Italy. Not so easy to find in the United States unless you have an purveyor of exotic meats or specialty foods. But today you can find any of these meats online. So expand your imagination a little.

How does a Boar Osso Bucco sound to you?

Let's not forget Lamb. A common meat you'll find so many delicious Italian pasta recipes dressed the traditional herb, rosemarino or rosemary.

Consider a Lasagna made with Buffalo meat. A heart healthy, lean meat that is a delicious alternative to ground beef.
