The Original Alfredo Sauce Recipe originated in a small restaurant in Rome and is made with butter, lot's of it, cream, parmigiano and just a touch of freshly grated nutmeg. What could be more simple then that!

An all time classic Italian pasta recipe that has spread the world and coated our bellies for the last few decades. Did you know that there really was a guy named Alfredo who lived in Rome, Italy and created this recipe? His restaurant in Rome was established in 1914 and named "Ristorante Alfredo alla Scrofa". Which means in Italian "Alfredo of the sow or pig". It is still located to this day on Via Della Scrofa where you can go and enjoy an authentic Fettucini Alfredo. Alfredo is no longer there but what better place to experience his legacy. When I lived in Rome I never had the opportunity to eat there but I hear the food is delicious and they boast the Fettucini Alfredo as their signature dish.

You can, and many gourmet chefs do, get very creative with this classic Italian pasta sauce. So creamy and delicious, you can turn it into a unique gourmet delight. Add a dollop of pesto sauce, top it with some grilled vegetables, add in some homemade roasted garlic. Try a CHICKEN ALFREDO RECIPE or a delicious SHRIMP ALFREDO PASTA

Let's start with the basics!

Alfredo Sauce Recipe Ingredients:

An Italian pasta recipe that has stood the test of time is made with one of the most popular, signature Italian cheeses. Parmigiano, use a good one such as Parmigiano Reggiano.

I like it extra creamy so this is how I make it for 1 pound of fettucini pasta.

First, go to your refrigerator, take out butter. No cheating! Do not use margarine. Julia Child would roll over in her grave. Now heavy cream and let's begin.

Alfredo Sauce Ingredients:

  • 1 lb of fettucini pasta cooked al dente. NOTE: You must drain and immediately add the freshly cooked pasta to the sauce so timing is everything.
  • 12 tablespoons of Butter
  • 2 cups of heavy cream
  • 1 cup of freshly grated parmigiano
  • Pinch nutmeg
  • Pinch of Salt

Gourmet Imported Cheeses

Alfredo Sauce Recipe Preparation:

Melting butter Add cream to the Alfredo base

Melt the butter in a sauce pan but don't let it boil or it will separate. If it does, toss it out and start fresh. This sauce should be creamy.

Slowly add the cream and let is simmer for about 1 minute. It will thicken slightly as it heats but the sauce really get thick once you add the parmigiano.

Sprinkle Nutmeg into the Alfredo base Add the fettucini to the cream and butter

Once the butter and cream are heated and begin to thicken naturally, sprinkle with the nutmeg and salt. This adds a really subtle and deliciously soothing flavor. You'll taste it even though it's subtitle.

Drain the pasta directly from the hot water. Then immediately add it to the cream and butter mixture.

Add the parmigiano to the alfredo

IMPORTANT: Remove from the heat before you add the parmigiano to the Alfredo cream mixture and toss.

This blend of ingredients will thicken before your eyes.

Plate your fettucini Alfredo on a family style, large plate or in individual servings and now we're dining on the classic fettucini with an Alfredo sauce recipe like there's no tomorrow!
