Chicken and Tomatoes
Chicken and tomatoes mixed with freshly chopped parsley. Mixed in with some hearty Mostaccioli and you've created a hearty, healthy, delicious meal. Chicken can please any crowd and what a colorful display for your guests. The flavor is so fresh and light.
Grape tomatoes are a good choice for this Italian pasta recipe. They are just delicate enough to match with the bite sized pieces of chicken and because they are a member of the heirloom tomato family, much like the San marzano tomatoes
, they are an extra sweet POP of flavor in your mouth.
Use assorted color tomatoes for a creative and appealing look to the pasta dish. We eat with our eyes first!
Chicken and Pasta Recipe Ingredients:
- 1 lb of chicken breast diced
- 8oz red grape tomatoes cut in half lengthwise
- 8oz yellow grape tomatoes cut in half lengthwise
- 1 cup of yellow onion diced
- 1 lb of mostaccioli pasta cooked al dente
- 4 cloves of garlic thinly sliced
- 1 cup chopped Italian parsley
- olive oil
- splash of white wine
- grated parmigiano cheese
- salt and pepper to taste
Chicken and Tomatoes Mostaccioli Preparation:
Begin boiling a large pot of hot water for your Mostaccoli. Learn the technique to cooking pasta perfectly by click here!
Coat a large sauté pan with olive oil and heat on medium heat. Add the garlic and onions and sauté until translucent. Now is a good time to splash in your white wine and crank up the heat. Toss in the chicken and allow to cook (it won't take long) for about 3-5 minutes. Allow the wine to evaporate.
When the chicken is nice and tender to the fork you can add the sliced grape tomatoes. Heat them with the chicken for 1 minute then add the chopped Italian parsley. Remove the pan from the heat and add the pasta directly to the pan and grate the cheese on top and toss.
Add more olive oil and grated cheese for this chicken and pasta recipe is not only accepted but welcomed!!!
