Heat things up this Summer!


Southwestern Pasta Salad


This Southwestern Pasta Salad is the perfect way to HEAT THINGS UP this summer. Roasted corn, black beans, cilantro, lime and a kick of just enough spice.

So break out the margarita's and let's get this party started!

And what better way to get it started then with a great tasting and unique summer pasta salad made with all things southwestern. True, this is not your typical Italian pasta recipe but it tastes so good it had to make it to this site.

Southwestern Pasta ingredients:

½ lb of small pasta shells small pasta shells
2 ears fire roasted corn
2 cups sliced grape tomatoes
15oz can black beans, rinsed
½ cup chops red onion
1 cup chop cilantro
¼ cup Olive Oil
½ tsp cumin
½ tsp chili powder
Juice of one lime
Salt to taste

Southwestern Pasta ingredients:

This is really simple. Begin by boiling the pasta shells. Cook them Al Dente! Drain and rinse in cold water until cooked, drizzle with olive oil, stir and set aside in a large mixing bowl.

In the meantime prepare the rest of your ingredients.

Open the can of black beans and place them in a colander. Rinse them until the water runs clear and set into the large mixing bowl.

Roasting corn is simple. I boil the ears of corn first for about 3 minutes and then I place on the grill until slightly charred on each side. Now you just allow to cool to the touch. Take a knife and cut the kernels away from the ear. Add to the mixing bowl.

Add the chopped cilantro, the red onions, the grape tomatoes, all the spices and the lime juice. I like to drizzle with more olive oil. It helps keep the ingredients pulled together and it's such a great flavor.

I just love my olive oil!

Mix the southwestern pasta salad together and serve in a serving dish.
