I can't believe it's been so long since my last newsletter. Time flies when you're eating good pasta. As you can see from the list of the "Latest Italian Pasta Recipes below".

Why the time out? I fell for someone, or I should say, he fell for me, I fell for him and he fell for my cooking. 20 pounds later we are still going strong!

Jeff, Kira, Grace, Michael

Jeff loves to have people around as much as I do and he knows I love to cook so we spend a lot of time cooking together and entertaining. Most recently we moved from the country in Columbia Missouri, which to be honest with you, I miss a lot.

Now, we split our time between California and Italy learning about food, wine and all the cultures that both California and Italy have to offer. Sometimes we have to pinch ourselves. "IS THIS REALLY OUR LIVES?!?!?!"

Finding someone to share your passions in life is like finding the perfect plate of pasta. NOT EASY, but when you find it you want to keep filling up that plate. Good thing for both of us the pasta can run out. Otherwise we'd be looking at 40 pounds later.

My Lastest Italian Pasta Recipes

Let's start with some pasta recipes that are sure to cover you over the holidays. Lasagna recipes are ideal for any crowd and if you're busting out of the traditional turkey and stuffing dinners then Lasagna is your answer!

Grass Fed Beef Lasagna

I don't know why people get so intimidated by Lasagna. Think Italian casserole.

I used grass fed beef in this recipe. I'm always saying, use fresh, quality ingredients. The food you make only tastes as good as the ingredients you put in it. In this Lasagna recipe these tasty ingredients shined through. The meat actually tasted like meat.

I layered it with baby bella mushrooms, quality mozzarella cheese, marinara sauce, topped it with a beciamella sauce and a ton of love and this lasagna recipe had no choice but to be a winner!

And it was a monster lasagna too. The largest I've ever made using a 12 x 20 x 4 inches deep. Mama Mia doesn't come close to describing this saucy, meaty, cheesy masterpiece.


Meatball Mania

Meatballs are another meatastic way to create a hearty winter or holiday meal.

Italian Meatballs

These baseball sized juicy and flavorful, meat creations come from one of my favorite Guido/Italian joints. Cafe Martorano's in Fort Lauderdale Florida. Me and Stevie go WAY BACK! He serves his next to a crisp fresh salad and slathered with marinara and although that is the traditional way you'll find it in most places in Italy, I just love and can't resist them piled on top of a plate of al dente spaghetti and powdered with freshly grated parmigiano cheese.

Do I hear NAP TIME!

Here's another meaty, cheesy bite. A mozzarella stuffed meatball to die for. Just some little thing I whipped up. Now you understand the 20 pounds.

It's my basic three meat, beef, veal and pork (pork is the flavor) meatball but I added an miniature sized mozzarella ball, typically called ciliegine, in the center of the meatball. When cooked, the cheese is a puff of melted cheese deliciousness.
